Cream of mushroom soup

-200g onion, sliced thinly
-400g mushrooms, sliced thinly
-2-3 garlic cloves, sliced thinly
-170g CC*
-170g yogurt*
-0.5L Veg stock (powder/cube/ready)
-1-2tbsp olive oil
-Salt, pepper, dried thyme
*1 tbsp cornflour

* Traditionally made with cream. I just didn't have any so I used yogurt and CC.


*Sauté onions in until they start to brown, add in mushrooms and cook until they're all caramelizing. Around 5mins.
*Add in salt, pepper, thyme, and garlic. Cook for another min or two until the garlic becomes fragrant.
*Add in veg stock, bring to a boil, then add CC and yogurt.
*Blend soup in batches.
*Mix cornflour with cold water, then stir into soup to thicken.

Shan's Thai Green Curry soup

250gm prawns/shrimp - green - peeled/deveined
1 heaped tsp green curry paste (depends on how hot you like it)
100mls of lite coconut milk (I use one that has 6gm fat/100ml)
150mls water
1 tsp sugar (palm/brown or white)
fresh basil leaves
green beens and baby peas

in non stick heated saucepan dump in the prawns and stir quickly for about 45seconds, add curry paste and stir for another 30 - 45 seconds, add coconut milk and water, reduce heat to low, add sugar and basil.. let simmer - not boil for about 10 mins, add beans and peas simmer for a further 2 mins and serve.

9gm fat/7 gms carbs/53gms protein.

I occasionally sub some prawns for tofu. or sub chicken or lamb. fav dish like.. ever!!
Ramsay's Broccoli Soup

Ingredients
to taste Water
to taste Salt
to taste Black pepper
2 heads Broccoli very fresh
to taste Olive oil optional, for garnish

Preparation

Cut the florets off the heads of broccoli. Cut the stems into similarly sized pieces. Add all of the broccoli -- florets and stems -- into a pot of rapidly-boiling, salted water (2 tablespoons salt in 5 quarts of water). Cover. Cook 3.5 to 4 minutes.


Using a slotted spoon, put the cooked broccoli pieces into a blender. Fill blender about halfway with cooking liquid. Blend carefully since it's hot. Add more cooking liquid as necessary to achieve the desired consistency. Check seasonings.


If desired, add cheese (goat cheese or cheddar cheese) to the bottom of the bowl before pouring the soup in. Serve, drizzled with olive oil if desired.
I can't find Di's lentil soup. I used to make it all the time but can't remember the recipe Sad
